Fox nuts/Makhana Raita  – Recipe by Dr. Manjula Gupta 

Fox nut is known as Makhana or Phoolmakhana by Indian people. Fox nuts are lotus flower’s seeds. It grows in water and found abundantly in India.  These also grow in japan, Korea and Russia.
Fox nuts are highly nutritious which are used as a healthy snack and also many Indian curries are prepared with this.
·         These are rich in nutrients like calcium, protein, carbohydrates, phosphorus, iron, zinc etc.
·         As it is highly rich in calcium and iron, it is very healthy snack in pregnancy too.
·         These are great anti-oxidants so used to prevent anti-aging signs like wrinkles, blemishes, hair fall, premature graying of hair etc.
·         It is a great aphrodisiac so used in male health issues like premature ejaculation, erectile dysfunctions, low stamina etc.
·         These contain low saturated fats, sodium and high magnesium, potassium so prevent from cardiovascular diseases.
·         As rich in calcium, used to maintain healthy joints and bones.
·         There would not be wrong to say that fox nuts provide overall health.
Ingredients –
·         1 cup fresh curd
·         Few phool makhana or fox nut
·         Green chilly according to the taste
·         Chopped 2 tbsp. fresh coriander leaves (Hara dhaniya)
·         2, 3 mint leaves (Pudina)
·         Half tsp. roasted cumin seeds powder (Jeera powder)
·         Pinch of garam masala powder
·         Black or regular salt as per the taste
Procedure –

·         Take a frying pan and put all the makhana in it on a low flame.
·         Keep stirring it till they get crunchy and crispy.
·         Once you are done with this, take these out in a plate and keep aside. Later coarsely crush them with rolling pin (Belan).
·         Now take fresh curd in a bowl and add roasted cumin powder, garam masala powder, salt and stir well.
·         Now put coarsely crushed makhana in it and stir very well.
·         Mix chopped coriander leaves and green chilly pieces.
·         Your makhana raita is ready to serve.
