Ingredients
- Punjabi samosas 4
- Oil (1 tablespoon)
- Asafetida (A pinch)
- Dried red chilies broken 3
- Cumin seeds (1 teaspoon)
- Ginger finely chopped (1 tablespoon)
- Garlic finely chopped (1 tablespoon)
- Red tomatoes finely chopped (6-8 medium)
- Turmeric powder (1/4 teaspoon)
- Kashmiri red chili powder (1 teaspoon)
- Salt (to taste)
- Fresh coriander leaves finely chopped (2 tablespoons)
- A fresh coriander sprig (for garnishing)
Method
Step
1
Heat
oil in a non-stick pan, add asafetida, dried red chilies and cumin seeds and sauté
till fragrant.
Step

Add
ginger and garlic and sauté for 1-2 minutes. Add tomatoes and cook for 6-8
minutes or till tomatoes become pulpy.
Step

Add
turmeric powder, Kashmiri red chili powder and salt and sauté for 1-2 minutes.
Add 3 cups of water and cook till the gravy comes to a boil.
Step

Break
the samosas into big pieces, add to the gravy and mix lightly.
Step

Add coriander leaves, mix and simmer
for 1-2 minutes.
Step

Transfer into a serving bowl, garnish with
a coriander sprig and serve hot.
