Samose Ki Sabji



Ingredients
  • Punjabi samosas 4
  • Oil (1 tablespoon)
  • Asafetida (A pinch)
  • Dried red chilies broken 3  
  • Cumin seeds (1 teaspoon)
  • Ginger finely chopped (1 tablespoon)
  • Garlic finely chopped (1 tablespoon)
  • Red tomatoes finely chopped (6-8 medium)
  • Turmeric powder  (1/4 teaspoon)
  • Kashmiri red chili powder  (1 teaspoon)
  • Salt (to taste)
  • Fresh coriander leaves finely chopped (2 tablespoons)
  • A fresh coriander sprig (for garnishing)
Method
Step 1
Heat oil in a non-stick pan, add asafetida, dried red chilies and cumin seeds and sauté till fragrant.
Step 2
Add ginger and garlic and sauté for 1-2 minutes. Add tomatoes and cook for 6-8 minutes or till tomatoes become pulpy.
Step 3
Add turmeric powder, Kashmiri red chili powder and salt and sauté for 1-2 minutes. Add 3 cups of water and cook till the gravy comes to a boil.

Step 4
Break the samosas into big pieces, add to the gravy and mix lightly.
Step 5
Add coriander leaves, mix and simmer for 1-2 minutes.
Step 6
Transfer into a serving bowl, garnish with a coriander sprig and serve hot.
